restaurant and wine bar owner, Aaron TeitelbaumAaron Teitelbaum, Executive Chef, Co-Owner
After spending seven years training in New York City, co-owner Aaron Teitelbaum returned home to pioneer a new style of dining for St. Louis. While in New York, he spent four years with the Culinary Institute earning his Associates in Culinary Arts and a Bachelors Degree in Restaurant Management.  Aaron also spent four years working with restaurateurs such as Bobby Flay at Mesa Grill and Daniel Boulud at Restaurant Daniel. Now after the successful opening and operation of MONARCH Restaurant & Wine Bar, Aaron has taken over the kitchen and management at Herbie's and assembled a stellar team.

Jeff ProfileJeff Orbin, Co-Owner
Armed with an astute sense of artistic style and marketing savvy, co-owner and restaurant designer Jeff Orbin, began his restaurant design experience in St. Louis as partner of Project 13 Incorporated, an award winning graphic design firm. Jeff diligently earned his degree in Advertising Design and Commercial Art preparing him to design and market extremely successful restaurants such as Miso in Clayton, which is still the number one sushi restaurant and lounge in St. Louis. Jeff is also co-owner and responsible for the design and marketing of MONARCH Restaurant & Wine Bar, which has received local and national recognition.

Shea Behymer's restaurant career began in 1997 – with the guidance of Tom Flynn, Steve McIntyre and Sean Gallagher – under  the very same roof that now houses Herbie's Vintage '72. Under the auspices of Café Balaban, Shea began as a valet; within the space of a year had already been promoted to a management position. Although Shea enjoyed working in the restaurant industry, in 2001 he transferred to Chicago to pursue a career in corporate sales. Neverthless, while in Chicago, he continued to develop his interest in cocktails and spirits by bartending at events all over the city. Despite his success in the sales industry, Shea returned to St. Louis in 2008 with his wife, Emily, to join the team at Herbie's Vintage '72.

Jason's love of blending flavors to create unique dining experiences took
shape in Northwest Arkansas, where he had the opportunity to contribute to the success of some of the region's finest dining establishments. In 2007, he moved to St. Louis and began working at Monarch Restaurant, where he further developed his culinary ability. Jason joined the team at Herbie's Vintage '72 in 2008, and his creativity has blossomed.

Heather's love for art began in the dance world.  A classically trained
ballet dancer, she has performed in the past with BalletMet Columbus, St.
Louis Ballet, and Toronto's National Ballet School. Heather's transition
from dance to Mixology began in St. Louis at Monarch Restaurant under the
guidance of Ted Kilgore, Master of Spirits & Mixology.  Inspired by the
fusion of art, food, wine and spirits she found at Monarch, Heather has
since made her own niche creating specialty cocktails behind the bar at
Herbie's. She also holds a B.A. in Communications with a Minor in Marketing from Saint Louis University.
